Baked Chicken Fingers


This is one of the easy meals that you can serve at home.  My girls totally loved this.  I can serve this with a side of salad and potato-totes.  Or it can very well be an appetizer or a finger food for a party. You can get creative with any seasonings of your choice, it doesn't really matter.


I served mine with portobello mushroom, fresh cucumber and tatertotes!

Steamed Layered Sago Kuih


I was in loved with this Malaysian dessert when I first had it in Malaysia many moons ago.  I had no idea this dessert was actually so easy to make as I thought it would be difficult to produce this dessert at home.  I suddenly had a craving for this sago kuih again and went on Google to look for how it was made.  To my utter surprised, it was fairly easy to make and since I have all the ingredients in my pantry, I set up to give this a try!  I would try other flavor next time or other recipe for a different texture? This one is chewy.


I steamed it in my old-time electric steamer and to my total dismay, my 10+ years steamer broke down in the middle of steaming!!!  What a timing for broken down.  So, I had to cover it with foil and finished steaming it in my wok on the stove top.  Today was not a good day for me, one obstacle after another kept on happening to me on the same day!  I wanted to go to the bank to have some document notarize and found out I forgot my cellphone which had my ID card at home ( thus I had to drive home to get it),  then I went to the bank they told me they charged $5 for cashier checks (so I had to go to Walmart), went to Walmart and realized they only took cash or debit card for money order (I didn't have either one so had to drive home), then got a call from school to tell me to come pick up my younger girl because she was not feeling well and had fever (So, had to drive to school), then my steamer broke down half way through steaming (and I had to find alternative way to finish steaming my kuih, I prepared this in the morning before I got a call from the school, supposed to bring it to my friend's house at night.) and because of my girl not feeling well, I had to cancel the plan to have dinner at my friend's house! :-(  Whoa, I didn't expect all these to happen when I had all plan up nicely the night before.  Seriously, life is so unpredictable!

Blueberry Cheesecake Cups


I eat fruit based on whatever fruit is on season, same with vegetable.  And when Whole Food had their one day 1 pint organic blueberries on sales for $1.99, I couldn't pass it up.  Did you all manage to get some too?  For the most benefit, it is best to eat it raw, without cooking or baking to get the most nutrients.  So, instead of baking with it, I used it as a decoration on these cheesecake cups.  The rest, we just washed and ate it by the handful.

I remembered my lazy cheesecake cups recipe that I did back in 2009 and this is another version revised from that recipe.  I used ginger snap cookies as a base this time and it soften up just like a crust.  Brilliant!

Vietnamese Shrimps Spring Rolls


I think I wrote about the Vietnamese spring rolls or summer rolls before but never really provided the method of making it.  Since I make this quite often now and have been playing with variety of fillings, I am definitely getting better.  I will show you a picture of my ingredients and guide you along in my next page (if you are a newbie of course).  As for my ever popular peanut hoisin dipping sauce, you can get the recipe here.  I have perfected the recipe, so you don't have to go else where for the recipe, just get it here!


This is definitely an appetizer or snack or lunch (it's great for picnic too) that you can make ahead of time.  It also becomes one of the food that I prepare for Evy's school lunchbox.  I cut the veggie, par-boil the vermicelli and shrimps and make the hoisin peanut sauce the night before.  Then, on the next day, I just have to wrap it with a rice paper and enclose it with a cling wrap individually (so that it won't dry out and easier for her to eat) .  I also pack a small container of peanut sauce for her to dip.

Korean Spicy Kimchi Topokki


My variation of topokki.  Kimchi Topokki!!  I figured the intense flavor of kimchi would give the basic spicy topokki a boost and I was right.  I actually liked this version better as I found the flavor was more well rounded.  This makes a great meatless meal too.

Feel free to adjust the thickness of your sauce as I think mine was a bit too dry.  I think it would taste better with a little more sauce.  Happy experimenting and whoever try this, please feedback to me ya!

Green Tea Cream Puffs


I was left with some heavy cream from Thanksgiving.  So, I needed to use it before it expired and I thought of  making a green tea flavor cream filling for some cream puffs.  Cream puff is very easy to make, I just followed a classic cream puff dough recipe and play with the flavor of cream filling.

Cream puff freezes well and I especially loved how the heavy cream filling tasted after in the freezer.  To me, it tasted so much like ice-cream and making it so good.  You can drizzle the top with melted milk chocolate to make it more presentable for a party or potluck.

Kuih Bakar



Kuih Bakar is a Malay kuih and can literally translated to baked cake.  This kuih can be easily spotted at pasar malam or pagi (night or morning open street market) in a flower mould shape.  I made mine in a 9"x13" pan so it was flat compared to the one sold outside.  You can make it in a 8" square or round pan for better height, just adjust the baking time as needed (longer baking time).


Certainly one easy kuih to make (just blend, pour and bake!), if you are short of time and want to eat Malay kuih, this would be a great choice.   The crisp and toasty edges are the best!  Note:  when you store it in the air-tight container for the next day, it won't be crisp anymore.  You can also freeze it for much later.  Just thaw on the kitchen counter until it is soft and you are ready to eat.

Spicy Sardine Puff Pastry


It is not a bad idea to keep some puff pastry in the freezer when it goes on sales.  It can make for a really quick snack or emergency finger food or appetizer.  Not a bad idea to have few canned of tomato sardine in the pantry for cases like this as well.  I always loved the spicy sardine filling, it was a flavor that I grew up loving and still love.  Too bad Evy didn't like the sardine filling, so Edda and I had most of it. :-P


This is one snack that is really easy to make with the frozen puff pastry.  You can get creative with all sort of fillings that you could imagine.  For example, curry chicken with potato, tuna, apple, kaya, red bean paste, nutella, cherry, strawberry, char siew, etc.  As long as you can imagine it, you can make it!

Crunchy Baked Chicken Strips



I was inspired by Gert and decided to make my own version. I have some leftover whole grain cereal with oats and almonds that no one wants to eat anymore so I thought this would be the perfect crispy coating for my chicken strips. If you have any cereal left at home, use it to coat your chicken, it is the perfect way to use it up. I used very simple seasoning grinders that I have at home, you can season yours however you liked too. My cereal is slightly sweet so my baked chicken strips turned out to be crunchy sweet. It's good eating like this without any dipping sauce. My girls totally loved it. Crunchy Crunch and Crispy Crisp!

Edda's Birthday Party (Part 1)

My little girl turned one year old few days ago. I had a birthday party for her because turning one is special for Chinese. So, I invited a couple of my friends to celebrate with us. Sharing some pictures of what I cooked with my readers here.

I learned a lesson from Evy's birthday. That is not to wait until the last minute to stir-fry because I was still cooking when my guests showed up and I had to finish cooking and setting the table in front of my guests. So, for this I told myself I got to get everything done before my guests arrived. So this time, I got everything cooked two hours prior and keep warm in my oven ready to bring out 5 minutes before the designated time. However, I also learned a new lesson with this arrangement, will spill in my part 2 post when I show the close up of my dishes.

Dessert section: pandan cream cheese pound cake, strawberry butter cake, brownie (can see from the 1st. picture), kuih bingka ubi and mixed fruit konnyaku jelly.

Stir-fried Udon Noodle Asian Style with Chinese Mushroom


Fried Spicy Mee Siam Malaysian Style


Delimas Chicken Curry with Potatoes. You can buy the Delimas Chicken Curry Paste here. Very easy, just add chicken, potatoes and coconut milk. Taste just like the Malaysian curry without all the work.


Claypot Beef Rendang, can also see it here. Oops! I forgot to add kaffir lime leaves. Anyway, you can buy it at MyTOA. But I think it's currently out of stock since I couldn't find it. Just check back often for new stock. For this, even easier, just add beef! I simmered this for a tad too long and some of the beef were broken into pieces. Well, at least it showed how tender the beef is.


Mixed Vegetable. I made a mistake of putting it in the oven to keep warm for 2 hours. Why? Because my broccoli turned soft instead of crunchy (the way I like it) and also it lost the vibrant green color and turned a bit yellow. Learned a lesson here, never put your veggie to keep warm in the oven. Half an hour should be fine, just not two hours. So, this is the new lesson learned.


Easy Stir-Fried Shrimps with sweet soy sauce, rice wine, sesame oil and black pepper. I just sprinkled some dried parsley for decoration. This dish which I whipped out while cooking, just an okay dish for my standard. I think I shouldn't add rice wine since the smell is pretty strong.

Evy's 3rd Birthday Celebration

This year for Evy birthday I had a little party for her over the weekend, only invited 4 little girls about her age and their parents. It took me two days to prepare the food but I had fun. I hope they enjoyed the food! :)

I made her this birthday cake, but my chocolate fudge didn't set in the middle! :( First time making fudge, very amatuer!
