Crisp Citrus Cookies


This Crisp Citrus Cookie is really easy to make by using a food processor.  This is requested by Evy and also I wanted to test out the new cookie cutters that I bought from Amazon.  I think I scored this cookie cutters pretty cheap at Amazon, each pair cost less than $2 each, but I can't remember the specific amount.  Since it was shipped from China, it took awhile to arrive but I can't complain since the shipping was free. If you are in the US and want this kind of cookie cutters, you can buy it via Amazon.  They have a lot of different characters to choose from as well.

Easy Pineapple Rolls



Easy pineapple rolls for a lazy me!  Or should I named it Lazy Pineapple Rolls??  What to do if I want to eat pineapple tart or roll but don't want to spend a whole day of making it?  I gotta think of a short-cut!!  With the earlier Red Bean Pastry Roll, I got the idea of making my pineapple roll the same easy way.  Granted it was not as pretty as the traditional method but I got my pineapple rolls and my girls were happy!  This is mostly for overseas moms who want some CNY treat but don't want to spend too much time of making it.  It's easy, so for those moms who were too scare to attempt it before (or too lazy), you can make this easy version!!


This is not the melt-in-the-mouth pastry, but not too bad I might say.  After years of making the CNY cookies every year, I have gotten lazy so this year I pick or create an even easier cookie recipes to make.  Now my girls are getting bigger and they look forward to my yearly CNY cookies, so I would make some for them.  Last time, I used to make a lot to give to friends but now just for my family consumption.

Red Bean Pastry Rolls


A friend shared a link to this recipe via Facebook and it interested me because I had a pack of red bean paste that needed to be used and this recipe looked easy.  I simplified the recipe further by using a food processor and with a ready made red bean paste, this was really easy to make. 


The pastry was crispy on the day it was baked and not as crispy day 2 onwards.  However, it was still a delicious treat.  A change from the usual CNY cookies!

Crispy Almond Cookies


Wow, how time flies!  Another Chinese Lunar New Year to be celebrated and this year is the year of the Horse!  I just realized that I have been blogging for the past 9 years and next year will be my 10 years anniversary!!  WOW!  My blog is getting old and hopefully I am not.  Haha... I really have to thank my readers who have supported my blog and who have come back to read my blog over the years even though I am not a good writer and I don't take beautiful pictures.   Nothing seem to change much over the years blogging wise, except I am now into a healthier eating life style and even simplified cooking method and recipes.  Also just to let you know that you can also follow me on Tweeter, Pinterest and Facebook for the latest blog update.  I hope after so many years, I still have more new recipes to share with you.  Okay long story short, hereby wishing all of you a healthy new year!  Eat healthier, eat healthy, eat more colorful food, eat more variety of superfood, eat more whole fresh food, cut down and minimize processed food and exercise for a HEALTHIER YOU!!  Money is nothing without health, so work on your health first and the rest will come into place.  HAPPY CHINESE LUNAR NEW YEAR!!!


As the name implied, this almond cookie is crispy!  I always made the melt-in-the-mouth peanut/cashew/almond cookies in the past and I wanted a change.  This year I wanted some crispy almond cookies, so I created this recipe.  This was actually my second attempt, my first attempt failed miserably resulted in a soft and melt-in-the-mouth almond cookies (so not sharing my failed attempt here).  I also wanted this recipe to be easily made (as I am famous for!), so out with my food processor!!  You can use your Kitchenaid mixer as a substitute.  Just add and mix and viola and not many things to wash later too.  Very easy and the dough can be easily shape and cut as well.  I didn't even use a roller to roll the dough, I just flatten it with my palms, but if you want an even shape, use your roller!  ;-)

Lemon Sables and Happy Valentine's Day!


Wishing all my readers a very Happy Valentine's Day in advance!  I am killing two birds with one stone here by incorporating one of my Chinese New Year cookies into a Valentine's day cookie!  I am posting this early just in case someone might want to make this for his/her valentine.

Sables is a classic French's butter cookies originating in Normandy France.  The texture is crisp, sandy and crumbly with the fragrant of butter.  For my lemon sables, it is fragrant with lemon of course but it still has the buttery taste in it.  I think it looks sweet for Valentine's day, what do you think?

Crispy Fried Peanut Rolls & Gong Xi Fa Cai!


This was my failed first attempt at making the crispy fried peanut rolls.   It looked good on the outside but failed on the inside.  The spring roll was too thick resulted the tough middle part.  I have learned from my mistake and now I understood why people have to make this small.  I would probably challenge myself with this recipe again and will share the recipe if I am successful.

My eldest wrote that Chinese character (happiness) in her Chinese class, she did a few and I placed those around my house.  :)  When we turned the word outside down, it means 到. Meaning happiness is here.

Butter Custard Cookies


This Butter Custard Cookie is a spin off of my Custard Cookies that I made in 2011.  That cookie was delicious and I wanted to make it again this year, but when I looked through the recipe again, it has cornstarch in it.  I threw away my cornstarch a while ago and have no plan of using it again, so here's the spin off!  I like this cookies a lot as it is very fragrant, it's buttery, custardy, and also smell of vanilla.  It is light and crispy.  Both my girls loved this cookie and told me they could finish all the cookies in one day.  Hahaha... 


You are welcome to double the recipe as this cookie will go fast.  Maybe doubling and make a few batches if you intend to give it as gift.

Happy Lunar New Year and Gong Xi Fa Cai!


Wishing all my readers a prosperous, happy and healthy Chinese New Year!!  Be glad that you get to spend quality time with your family and relative.  Nothing beat reunion dinner and the continuous visiting in relatives' houses for more eats and ang pows (red packet).


The things that I was most looking forward to Chinese New Year when I was young were wearing new clothes and shoes and visiting both grandmas and relatives.  Eating the Chinese New Year sweets, cookies and all the auspicious food and not forgetting receiving the red packets as well wishes.  Playing with fire crackers were fun too and I especially loved the atmosphere back home, very festive.  Moving here, I still try to provide my girls with these CNY tradition, except they don't get to visit both their grandparents and relatives.  We have friends instead.

LCOM's Pizzelle (Chocolate Orange Pizzelle)


My only new cookie for this year, 2012.  By all means, this is not the usual pizzelle cookies, but just a cookie I created that uses a pizzelle press to make.  I was not as impressed with my previous recipe because I thought the rice flour taste was too strong.  Hence, in this recipe, I reduced the rice flour and replaced it with all-purpose flour, added cocoa powder and orange extract and made it into a Chocolate Orange flavored pizzelle.  I loved the pairing of chocolate and orange and this pizzelle remains crispy once baked.


Perhaps the color was not as appetizing (since I used specially dark cocoa powder) but I do love the taste of orange and cocoa powder.  I managed to get rid of the rice flour taste too.

Custard Cookies


This cookie sure have a strange look.  Evy called it snake skin cookie.  LOL!  This was resulted from my experiment in the kitchen.  I was surprised that the cookie turned out like this too.  If you try this recipe of mine, let me know if yours turn out looking like this too, okay?  Because I am curious!  Look aside, this cookie is crisp and melt in the mouth with the fragrant of custard powder.  Actually tasted very good.  This is the last of my CNY cookies for this year.  了!

Early Happy Valentine's Day!! 情人节快乐!!


I was told that the last day of Chinese New Year is also the Chinese Valentine's Day.  So what's better way  to incorporate the Chinese New Year cookies into the Valentine's Day cookies as well.  I made this pineapple tarts using the heart shape cookie cutter and voila ~ a sweet heart shape Valentine's cookie made with love from the heart! 

You can find my recipe here.  I am sure your loved one would love to receive a gift from the heart that made from scratch.  People always say to win a man's heart, you will have to win his tummy first.  These days I am not too sure about this, but perhaps that's still the case if he is looking for a wife that can cook.  :-P

Chinese Cashew Cookies



This year I made Cashew Cookies instead of my usual Peanut Cookies.   I have a can of salted cashews and I thought I would use that to make my cookies.  First, I toasted my cashews until golden brown and then I processed it in my food processor until fine.  After that, I used it to make this cashew cookies.  I decorated the top with a half cashew just to identify it (if not it would look like peanut cookies).  This cookies is the soft and melt in the mouth type.  So, very fragile.  Once you pop into the mouth, it dissolves and melts.

The sweetness is just nice and very easy to make as well.  Through my blog, all beginner can at least make a few delicious CNY cookies on their own.  Such as peanut cookies, cashew cookies, sugi cookies, cornflakes cookies, etc...

Chinese Sesame Cookies


I remembered when I was a child, I heart a type of Chinese sesame seeds cookies.  It had been so long that I could hardly recall the texture of this cookies anymore.  I only remembered if I saw it being served, I would certainly had some.  I did a search on the web and found one recipe from About.com and the picture of the sesame seeds cookies resembled the one I remembered.  So, of course I got to give this recipe a try.  But not sure why my cookies turned out looking different (mine had flat top)?  The one thing I changed was used all butter instead of half butter and half shortening.


I wanted contrasting colors so I tried a few with black sesame seeds.  This cookies is delicious, fragrant with the smell of sesame seeds and very crispy.  But not quite like the one I remembered.  Nevertheless, we were all in loved with this cookies, my girls couldn't stop snacking on it.  I don't think this batch can last through Chinese New Year.  The longer it kept, the smell of sesame seeds grew stronger.

Chinese Almond Cookies


I had some leftover almond that I needed to use up, about 1/3 cup of it.  Just nice that we finished the oatmeal cookies that I made for our snack so I wanted to use the almond to make cookies.  A fool proof recipe that I made before and also must be easy.  So I picked this almond sugi cookies recipe that I made dozen of times and added the chopped almond.

I really loved the extra crunch from the chopped almond and this cookie was very yummy.  So suitable for Chinese New Year too.

Pineapple Tarts 2010


These pineapple rolls were also called nastar.  This was the first time I made a successful nastar actually because previously I just couldn't roll the pastry out from the nastar molds that I bought.  It was so hard that I just gave up.  When I went back to Malaysia in 2008, I saw another plastic nastar mold with a push stick to push the dough out, I quickly grabbed one.  And it worked!  It made my life so much easier with this new tool.




















I spent the whole afternoon and only managed to produce 59 nastars, like shown above!  Like I said before, this was one cookie that took time to make and could be finished in on time.  My pineapple pastry and short-cut jam recipes can be found here. 

This pastry is soft and melt-in-the-mouth type. Some were not as pretty because after a while I just wouldn't be bother anymore.  :P  Great thing is it is just for home consumption.

Cornflakes Cookies without Flour Take 2


























With the advice from youfei, I used honey instead of sugar to help it bind.  I added dried cranberries and walnuts to make it healthier but this is not a healthy cookies because it is packed with butter.  The butter made it really fragrant and when baked, it was really crispy.  This recipe is for those who seeks it, enjoy!  The sweetness is just nice, not overly sweet.

You can add any dried fruits, roasted nuts, chips for baking or anything you can think of  to make it uniquely yours.  Now I know what to make to bring it for Evy's classmates, the chocolate version would be ideal for little kids.  Without nuts, just raisin and cornflakes so all kids can enjoy it.  ^o^

Chocolate Covered Cornflakes Cookies



From the boo boo of my previous post, I created this Chocolate Covered Cornflakes Cookies.   This is a yummy cookie.  Almost like my chocolate clusters yet a bit different.  Since some of the cornflakes cookies that I made early won't stick together, I have resorted to use chocolate to bind them together.  I couldn't waste a bowl of fragrant buttery and crispy cornflakes mix.  Chocolate is excellent especially in this cold weather (super cold winter here), I don't even have to store it in the refrigerator.

Ok,  back to the draft on this cornflake cookies, if I failed again, more chocolate one will be created.  Even though the chocolate ones are delicious, but this plain one has it own place in our hearts, even my girls who love chocolate wanted to eat this too, Evy said both were good.  To me, this is more suitable for warm weather as chocolate will melt if it's warm.

Cornflakes Cookies without Flour



If you are my avid reader or someone who have tried my Chinese New Year cookie recipes, you should know I have been making cornflakes cookies for years. The one that uses flour and oil/butter. This year I wanted to try something different. Cornflakes cookies without flour and I am still experimenting with the recipe. Let me perfect it first before I share it with you because I am having problem for some to stick together. I ended out creating another version of this cookies, the chocolate covered cornflakes cookies which is equally delicious if not more.

Green Curry Paste Cookies



I had been thinking...whether to create new Chinese New Year cookie recipes for 2010. I came across Laksa Cookies last year but never tried it. 1) Living aboard good laksa paste was hard to come by. 2) I am too lazy to make my own paste (too much extra work just to make a cookie). And then it kind of strike me that I knew a good Thai green curry paste and in fact I had it at home. So, why not make a Green Curry Paste Cookie instead of the Laksa cookie for us who live overseas? Hence, this cookie was inspired by Laksa cookies and I was eager to try it out. So, sharing with you my tried and tested Green Curry Paste Cookies. This cookie is crunchy and very spicy! Definitely for adult who likes it spicy. And of course tasted like Thai green curry!
