Citrus Poppy Seed Short-bread Cookies


I was just in the mood for some short-bread cookies.  I had freeze some orange zest for use in baking in the future and this recipe definitely called for it.  This cookie is fragrant with butter and citrus and very crunchy.  I hope you would like this short-bread cookies.  It is not hard to make but the dough is crumbly so it can be hard to shape into a log.  Good luck!




Ingredients:

1 and 1/2 sticks of butter (6 oz), softened
1 cup cane sugar
1 tsp. pure lemon extract
2 Tbsp. poppy seeds
2 Tsp. orange zest
2 cup all-purpose flour
1/4 tsp. sea salt

Methods:

1.  In a large bowl, beat together softened butter and sugar until light and fluffy.  Add lemon extract, orange zest and poppy seeds, stir to mix well.

2.  Add flour and sea salt and mix into a crumbly dough.  Divide into two parts and shape each part into a log and wrap with plastic cling wrap.  Refrigerate dough until firm.  Or put in freezer section for later.

3.  Preheat oven to 350'F.  Take out one of the dough and slice each cookie and place on a parchment lined cookie sheet.  Bake for 12 minutes or until slightly brown on edges.

4.  Take it out and cool completely on a wire rack.  Store them in an air-tight container.
